the yummiest pie ever and a catch up happywednesday-pierecipe-chat

Today is my first real FREE day in what feels like forever. For those of you who do not know what I do other than photograph weddings, I am a nanny to two amazing, incredible, funny, smart, crazy fun twins! I absolutely LOVE them (more about life as a nanny in another blog post) 😉 I also a few months ago picked up an extra job as a personal assistant for a lady who runs her own LulaRoe business, she is an incredible leader and you can find her shop here . Tell her I sent you her way! I take pictures of the clothes, organize, unpack boxes and also get to play with her cute kiddos (another set of twins haha and a little bambino) If I said I didn’t love kids…I’d be lying! I cannot wait until the day I get to be a Mama, for now though- this will more than do!

Anyway… today is wide open, which has not happened in a long time… it’s so good to just B R E A T H E. I think we sometimes forget that we need time for ourselves, it’s just as important to take care of ourselves and we simply do not give ourselves enough grace! Today I got to sleep in (a little), met a wonderful entrepreneur for donuts and coffee (I had a maple bacon donut and it was heavenly, i thought i would hate it but was pleasantly surprised-TRY IT) Anyway, I did the last of my grocery shopping and came home and made PIE! It is hands down my favorite pie I have ever made and I am not usually a pie person (i know, i am crazy) so I am so happy to have found a pie I can literally eat the entire dish of!!

My big sister who has been living in Uganda teaching moved home to America with her husband and I am beyond ecstatic to have her a few hours away now 🙂 It’s funny how much of a difference just being in the same time zone can make. She arrives in Raleigh tomorrow afternoon for a few days and we have so much planned. We are heading to Charlotte Saturday morning for the weekend so if you know of anywhere special to visit there- let me know! I’ve never been and can’t wait! I was chatting with my sister the other night and she had mentioned that this was the longest we had been apart…1 year! That may not see too crazy for some of you that maybe live even further from family (bless you- a few hours is hard enough for me) haha! So we cannot wait to catch up, binge watch netflix and stuff ourselves silly with endless junk food!

So my chill out day has quickly become slightly chaotic as I run around trying to clean the apartment. Why do we ALWAYS leave cleaning until right before the visitor comes? Last week I deep cleaned, thinking I would save myself time… but somehow I still have so much cleaning to do! Ahh…the life of a wifey!

Anyway, taking these few minutes to post this blog and share with you the amazing recipe for the pie I made that my cousin Holly found and made me when I was visiting her a couple weeks ago- it’s so good and unfortunately I cannot take any credit for the taste 🙁 boo.

This recipe is super easy and quick- go ahead, treat yourself this Wednesday evening to some Strawberry Rhubarb pie with a cuppa tea! You won’t regret it.

Strawberry + Rhubarb Pie


-2 Cups Strawberries

-2 Cups Rhubarb

-1 1/3 Cup Sugar

-1/3 Cup Plain Flour

-Pie Crust (because I was lazy today)


-Preheat oven to 425*

-Chop up strawberries and rhubarb pretty small

-In a separate bowl, mix the sugar and flour together and set aside

-Put 1 Cup of strawberries + rhubarb in the pie crust

-Top with half of the sugar/flour mixture

-Add remaining strawberries + rhubarb

-Finish by coating them with the rest of the sugar/flour mix

-Put pie crust on top and slit a few slices on the top

-Place foil around the edges of the pie to avoid burning and spilling

-Bake for 35 minutes, take out and remove tin foil, pop back in for another 5 minutes then take out, let cool and INDULGE!!!
